Yummy! Easy to Make Summer Desserts: Homemade Ice Cream, Cherry and Banana Cream Pie

Summer is the perfect time for get togethers with family and friends. Whether picnicking, beside the pool, camping, or just relaxing, we love desserts that are cool, refreshing, and easy to make. But of course we want them to be delicious and something our family and friends will remember. This article has recipes to make your summertime delicious. Lemon Ice Cream, Vanilla Ice Cream, and Cherry and Banana Cream Pie will bring you rave reviews.

NO ICE CREAM FREEZER NEEDED LEMON ICE CREAM

2 lemons
1 cup whipping cream
1/2 cup sugar

Finely grate 1 tablespoon of the lemon rind and put into a large mixing bowl. Squeeze lemons for 1/4 cup fresh lemon juice. Add juice to the bowl with the grated rind. Add the whipping cream and the sugar to the bowl.

Using electric mixer, beat on high speed until soft peaks (tips fold over) form when
the beaters are lifted. Transfer from the bowl to an air-tight freeze-proof container.

Freeze ice cream for at least a couple of hours or until firm. Garnish with thin strips of the lemon rind, if desired.

VANILLA ICE CREAM

4 cups whipping cream
2 cups half-and-half cream
2 cups whole milk
1 1/2 cups sugar
1 tablespoon vanilla flavoring

Heat the milk in a saucepan over medium heat just until it bubbles around the edges. Remove from the heat and add the sugar, stirring until sugar is completely dissolved. Put in refrigerator to chill for at least a half hour.

Remove the chilled sugar/milk mixture from the refrigerator and add the whipping cream, half-and-half cream and vanilla flavoring. Stir to combine. Pour the mixture into the freezer can of ice cream freezer and follow the directions of your particular freezer.

CHERRY AND BANANA CREAM PIE

1 graham cracker pie crust
4-oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup thawed whipped topping
1 pkg (4-serving size) cherry gelatin
1 pkg (4-serving size) french vanilla cook and serve pudding mix
1 1/4 cups water
1 cup very well drained maraschino cherries
1 cup firm banana slices

Mix the cream cheese and powdered sugar in a large bowl until well blended. Fold in the whipped topping. Spread over the bottom of the graham cracker crust and place in refrigerator.

Mix the gelatin, pudding mix, and water in a medium saucepan until smooth. Cook over medium heat, stirring constantly, until mixture just starts to boil. Remove from the heat. Allow to cool for 5 minutes. Stir in the bananas and cherries. Spoon mixture over the cooled cream cheese layer.

Refrigerate pie for 4 hours or until set. Garnish with whipped topping and banana slices or cherries, if desired.

Apricot Cherry Bar Cookies recipe and 3 More yummy Cookie Recipes

Delicious Cookie

1. Apricot Cherry Bars

Ingredient - establishment Method

- 1 box yellow cake mix
- 1/4 cup water
- 1/4 cup butter or margarine - softened
- 1/4 cup packed brown sugar
- 2 eggs
- 1 cup cut-up dried apricots
- 1/2 cup drained chopped maraschino cherries
- Powdered sugar

Directions:

- Heat oven to 375º.
- Grease and flour jelly roll pan, 15 1/2 × 10 1/2 × 1 inch.
- Beat half of the cake mix (dry), the water, butter, brown sugar and eggs in large bowl with electric mixer on medium speed until smooth, or mix with spoon.
- Stir in remaining cake mix, the apricots and cherries.
- Spread evenly in pan.
- Bake 20 to 25 minutes or until toothpick inserted in town comes out
clean.
- Cool completely. Sprinkle with powdered sugar.

Cut into 6 rows by 5 rows.

2. Banana Cornmeal Cookies

Ingredient - establishment Method

- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter or margarine - softened
- 1/2 cup mashed very ripe banana (1 medium)
- 1 egg
- 2 1/2 cups all-purpose flour
- 1 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon

Directions:

- Heat oven to 375º.
- Grease cookie sheet. Beat brown sugar, 1/2 cup granulated sugar, the butter, banana and egg in large bowl with electric mixer on medium speed, or mix with spoon.
- Stir in flour, cornmeal, baking powder, salt and 1 teaspoon cinnamon. (If dough is too soft to shape, cover and refrigerate about 2 hours or until firm.)
- Mix 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Shape dough into 1 1/4-inch balls.
- Place about 3 inches apart on cookie sheet.
- Flatten slightly in crisscross pattern with fork dipped into cinnamon-sugar mixture.
- Bake 10 to 12 minutes or until light brown.
- Immediately take off from cookie sheet to wire rack.

3. Banana Ginger Jumbles

Ingredient - establishment Method

- 1 cup packed brown sugar
- 1/2 cup butter or margarine - softened
- 1/2 cup shortening
- 1 tablespoon grated gingerroot Or 1 teaspoon ground ginger
- 2 eggs
- 1 cup mashed very ripe bananas (2 medium)
- 1/4 cup milk
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- Powdered sugar, if desired

Directions:

- Heat oven to 375º. Beat brown sugar, butter, shortening, gingerroot and eggs in large bowl with electric mixer on medium speed, or mix with spoon.
- Stir in bananas and milk. Stir in flour, baking powder and salt.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake 9 to 11 minutes or until roughly no indentation remains when touched in center.
- take off from cookie sheet to wire rack.
- Sprinkle with powdered sugar while warm.

4. Banana-Nut Bars

Ingredient - establishment Method

- 1 cup sugar
- 1 cup mashed very ripe bananas (2 medium)
- 1/3 cup vegetable oil
- 2 eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped nuts
- Cream Cheese Frosting - (recipe follows)

Cream Cheese Frosting

- 1 (3 ounce) box cream cheese - softened
- 1/3 cup butter or margarine - softened
- 1 teaspoon vanilla
- 2 cups powdered sugar

Directions:

- Heat oven to 350º.
- Grease rectangular pan, 13 × 9 × 2 inches.
- Mix sugar, bananas, oil and eggs in large bowl with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in nuts.
- Spread batter in pan.
- Bake 25 to 30 minutes or until toothpick inserted in town comes out clean.
- Cool completely.
- Frost with Cream Cheese Frosting.
- Cut into 6 row by 4 rows.
- Store covered in refrigerator.

Cream Cheese Frosting:

- Mix cream cheese, butter and vanilla in medium bowl.
- slowly beat in powdered sugar with spoon until level and spreadable.

Vanilla Cherry Drop Cookie method

The vanilla cherry drop cookie method mixes together several great tasting ingredients to give a soft, but crunchy masterpiece!

Ingredients

Cookie Recipes

1 (6 ounce) jar red maraschino cherries, drained

1 (6 ounce) jar green maraschino cherries, drained

1 stick (1/2 cup) salted butter, softened

1/2 cup shortening

1 (3 ounce) container cream cheese, softened

1 cup granulated sugar

1 cup firmly packed brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup quick cooking oats

1 cup crisp rice cereal

1 cup chopped pecans

1 cup flaked coconut

1 (12 ounce) container vanilla chips

Hardware

Whisk

Large bowl

Medium bowl

Cookie sheets

Mixer

Step 1: Chop cherries, drain on paper towels; set aside.

Step 2: Lightly grease or spray cookies sheets with no-stick spray; set aside.

Step 3: Preheat oven to 350 degrees F.

Step 4: In a medium bowl, whisk together the flour, baking powder, and salt; set aside.

Step 5: In a large bowl, beat butter, shortening, and cream cheese together with an electric mixer set on medium-high speed until flat and creamy.

Step 6: Add sugars, beating well.

Step 7: Add eggs and vanilla extract; beat well.

Step 8: gradually add flour blend until fully mixed.

Step 9: Stir in chopped cherries, oats, rice cereal, chopped pecans, coconut, and vanilla chips; stir well.

Step 10: Drop dough by rounded tablespoons 2 inches apart on prepared cookie sheets.

Step 11: Bake for 12 minutes or until set. Let cookies cool for 1 small before transferring to a cooling surface.

Makes about 4 dozen cookies.
