German sweet chocolate, grated 1 teaspoon vanilla extract 1/4 cup whipped topping Directions In a large, heavy saucepan, combine the sugar, cocoa, cornstarch and salt. Gradually stir in the fat free milk and evaporated milk. Bring to a boil over medium heat. Cook and stir for 2 minutes or until pudding is thickened. Remove from heat. Stir in the grated chocolate and vanilla. Spoon pudding into dessert dishes. CREAM CHEESE PINEAPPLE PIE
1 unbaked 9-inch pie crust Fruit Layer: 1/3 cup sugar
In a small saucepan, combine the sugar, cornstarch, and pineapple (do not drain). Cook the mixture over medium heat while stirring constantly until the mixture is thick and clear. Set aside and allow to cool. When cooled, spread the mixture over the bottom of the unbaked pie crust. Cream Cheese Layer: 1 pkg (8-oz) cream cheese, softened to room temperature
Blend the cream cheese, sugar, and salt together in a mixer bowl. Add the eggs, one at a time, beating after each one. Blend in the milk and vanilla. (It is okay if the mixture looks curdled.) Pour the mixture over the pineapple layer in the crust. Sprinkle the chopped pecans over all. Bake at 400 degrees for 10 minutes. Lower the temperature to 325 degrees and bake for 50 minutes. Nachos are triangles of tortilla that have been deep fried until crispy and topped with a variety of spicy tomato and pepper mixture and grated cheese (to brown either under the grill or in the oven). |

This nachos recipe makes 30 servings. Please adjust ingredients to the number of guests. Ingredients 5 tortillas
Optional - 1 jar of red jalapenos and 1 jar of green jalapenos Preparation Stack the tortillas neatly and cut in half with a sharp knife, then cut each half into 3 wedges to give 6 nachos from each tortilla. Heat about 2.5cm (1 inch) oil in a frying pan until just smoking. Fry the pieces of tortilla, only a few at a time, until they are crispy and browned (just lightly). Turn them once as you fry them. Remove from the frying pan and leave to drain any excess of oil. Now, transfer them to a baking sheet as we are going to place them in the oven. Place the red pepper into a grill pan and grill until the skin is slightly burnt. When done, leave to cool (careful, peppers can get very hot!) and peel off the skin. Chop the pepper into small squares. Mix the chopped pepper with the salsa, spring onions and the ripe tomatoes. Mash the re-fried beans and spread it over the nachos as if it was butter. Top the spread with the tomato mixture. Now is the time to sprinkle each nacho with the grated cheese (both Cheddar and Parmesan) and place them under a preheated oven, not too hot. When the cheese starts to bubbles and it browns slightly remove the nachos from the oven. Alternatively, you can place the baking tray with the nachos in a preheated oven at gas mark 6 for around 12 minutes (or until the cheese starts to bubble). Nachos can be served hot or cold, they are a fantastic appetizer. Sprinkle with the chopped coriander, it adds a great final touch. If desired, add the green and red jalapenos over the nachos but do serve them in separate dishes as some people will not want the hot chilies. Here is delicious recipe for tofu that is very easy to prepare. Fried Tofu (for two) Ingredients: - Two tofu blocks - One cup of Dashi (you can use beef bullion broth if dashi is not available) -Two tablespoons of soy sauce -Two tablespoons of mirin (if mirin is not available, you can use sweet Japanese rice wine, white wine will work too) - Mix one tablespoon of corn starch in a small amount of water - Use this corn starch to coat tofu - One tablespoon of grated ginger - Arrange to decorate - Cooking oil Preparation: - Place the tofu in a flat plate, on a kitchen paper towel or on a soft cloth to cut. - Put a kitchen paper on top of the tofu and place another flat plate on top of the kitchen paper. Slowly lift the plate and gently tun it sideways to let excess water off the tofu. Be careful not to crush the tofu when you are doing this. - On the side, Prepare the dashi, mirin and soy sauce using a deep casserole or pan. Heat the casserole or pan and as soon as it boils, add corn starch and water, mix well. - Now dry the tofu using a kitchen paper towel or a soft cloth and slice them in half. Lightly coat the tofu with corn starch. - In a sauce pan, place plenty of cooking oil and fry the tofu until it turns to golden brown in color. - Remove the sauce pan from the flame. Place the tofu on kitchen paper towels to remove excess cooking oil and place in a bowl. - Add the sauce prepared previously on the tofu. Gently sprinkle a small amount of grated ginger on the tofu. - You can also add grated radish, pepper, fish flakes, or some green if you like. Goes well with white rice. Serve hot and enjoy. - 1 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
Directions:
- Heat oven to 375º.
- Grease cookie sheet. Beat brown sugar, 1/2 cup granulated sugar, the butter, banana and egg in large bowl with electric mixer on medium speed, or mix with spoon.
- Stir in flour, cornmeal, baking powder, salt and 1 teaspoon cinnamon. (If dough is too soft to shape, cover and refrigerate about 2 hours or until firm.)
- Mix 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Shape dough into 1 1/4-inch balls.
- Place about 3 inches apart on cookie sheet.
- Flatten slightly in crisscross pattern with fork dipped into cinnamon-sugar mixture.
- Bake 10 to 12 minutes or until light brown.
- Immediately take off from cookie sheet to wire rack.
3. Banana Ginger Jumbles
Ingredient - establishment Method
- 1 cup packed brown sugar
- 1/2 cup butter or margarine - softened
- 1/2 cup shortening
- 1 tablespoon grated gingerroot Or 1 teaspoon ground ginger
- 2 eggs
- 1 cup mashed very ripe bananas (2 medium)
- 1/4 cup milk
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- Powdered sugar, if desired
Directions:
- Heat oven to 375º. Beat brown sugar, butter, shortening, gingerroot and eggs in large bowl with electric mixer on medium speed, or mix with spoon.
- Stir in bananas and milk. Stir in flour, baking powder and salt.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake 9 to 11 minutes or until roughly no indentation remains when touched in center.
- take off from cookie sheet to wire rack.
- Sprinkle with powdered sugar while warm.

Whenever I hear the word Sans rival, I always remember my high school best friend who gave her crush the same underground name because it is her favorite cake. Dream a boy named Sans Rival... Can't help but giggle at the thought.
Sans rival is a cake that you would like to have every day, unless you are trying to slim down. It is creamy, tasty, sweet, with bits and pieces of cashew nuts that makes the cake even more delightfully delicious. I tried baking it myself using this formula that I got from no other than my best friend. Yes, the same one I mentioned earlier.
Delicious Cookie Recipes
Ingredients:
8 egg whites
1 cup sugar
1½ cups cashew nuts (finely chopped)
Filling:
8 egg yolks
1 cup sugar
½ cup water
1 tsp corn syrup
1/3 lb fresh butter
½ cup cashew nuts (chopped)
Cooking Procedure:
Beat egg whites until stiff and foamy. Add 1 cup sugar gradually, beating continuously, until you see soft peaks formed. Add finely chopped cashew nuts. Grease four cookie sheets which are 9x14 inch in size and dust lightly with flour. Pour aggregate into 4 sheets and spread thin. Bake in preheated oven 300ºF for about 30 minutes or until golden brown. Remove cookie sheets and set aside to cool.
Put 1 cup sugar, ½ cup water and 1 teaspoon corn syrup in saucepan and set to boil without stirring. When thick sufficient to form a soft ball when dropped in a saucer of water, Remove from heat and set aside to cool.
Beat egg yolks until lemon-colored. Add syrup itsybitsy by little, beating well.
Melt butter to creamy consistency and when syrup aggregate is sufficiently cool, add itsybitsy by itsybitsy while lasting to cream. Spread butter aggregate on the layers and put together, one on top of the other, sandwich fashion. Spread more butter aggregate to the top layer and sides and sprinkle with cashew nuts, Wrap in wax paper and chill before serving.

Chocolate Mint Sandwich Cookies Recipe
The chocolate mint sandwich cookies recipe is quite special! A creamy peppermint filling, sandwiched between two rich chocolate halves, unbelievably delicious!
Ingredients
Delicious Cookie
6 tablespoons salted butter
1 1/2 cups packed brown sugar
2 tablespoons water
2 cups (12 ounces) semisweet chocolate chips
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
Filling:
2 1/2 cups powdered sugar
1/4 cup salted butter, softened
3 tablespoons milk
1/2 teaspoon peppermint extract
Hardware
Whisk
Medium sauce pan
2 x medium bowls
Cookie sheets
Mixer
Step 1: In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
Step 2: In a medium saucepan, combine butter, brown sugar, water and chocolate chips. Cook and stir over low heat until chips are melted. Cool.
Step 3: Preheat oven to 350 degrees F.
Step 4: Beat eggs and vanilla extract into mixture.
Step 5: Gradually add the flour mixture until just combined.
Step 6: Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets.
Step 7: Bake for 10-12 minutes or until firm. Immediately transfer cookies to a cooling surface.
Filling:
Step 1: Combine filling ingredients in a medium bowl; beat until smooth.
Step 2: Spread bottom half of cookies with filling; top with remaining cookies.
Makes about 30 cookies.

Delicious Mandarin Beef Recipe
Preparation time: 25 minutes + 15 minutes marinating
Total cooking lime: 5 minutes

Ingredients for the mandarin beef recipe:

350 g (11 oz.) boned rib eye steak, finely sliced
2 teaspoons soy sauce
2 teaspoons dry sherry
1 teaspoon chopped fresh ginger
1 teaspoon sesame oil
oil, for cooking
1/4 teaspoon ground white pepper
2 teaspoons finely chopped dried mandarin or tangerine rind
2 teaspoons soy sauce, extra
1 1/2 teaspoons caster sugar
1 1/2 teaspoons cornflour
4 tablespoons beef stock
Directions for the mandarin beef recipe:
1. If you ever are thinking to try the mandarin beef recipe, start by following these guidelines. Place the meat in a bowl. Mix the soy, shorn, ginger and sesame oil together, add to the meat and toss well. Leave to marinate for 15 minutes.
2. Heat the wok until very hot, add 1 tablespoon of the oil and swirl it around to coal the side. Add the beef and stir-fry over high heat for
minutes, or until the meat is browned on all sides.
3. Add the pepper, dried mandarin or tangerine rind, extra soy sauce and sugar. Stir-fry briefly.
4. Dissolve the cornflour in a little of the stock and then add the remaining stock. Pour the whole lot into the wok. Stir until the sauce boils and thickens. Serve immediately.

Recipe for Traditional Swedish Christmas Cookies or Pepparkakor
In any traditional Swedish home, the smell of these home baked cookies will be found wafting throughout the home at Christmas time. The Swedes really love cooking for the holiday season and the Christmas Eve celebration is the highlight of the year.
Don't be worried by the literal translation of Pepparkakor, which means pepper cookies, it may have been that in olden times there was a little pepper in the recipe, but now there's just a tasty mix of spices.
Delicious Cookie
Christmas Spice Cookies or Pepparkakor
Makes about 2 dozen cookies
8 ounces (2 sticks) butter 1 1/2 cups sugar 1 egg 1 tablespoon light corn syrup 1/4 cup orange juice 2 teaspoons orange zest 3 1/2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons ground cinnamon 2 teaspoons ground ginger 2 teaspoons ground cloves
1. Preheat oven to 400˚ F.
2. In a large bowl, cream the butter and sugar. Stir in egg, corn syrup, orange juice, and orange zest.
3. In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, and cloves. Stir flour mixture into the creamed butter until combined.
4. Roll dough out to 1/8 inch and cut into shapes with cookie cutters. Bake for 8 to 10 minutes in the oven. Cool cookies on wire racks.
These are a wonderful cookie recipe for children to make and taste even better when cut out with all manner of shape of cookie cutters!

White Chocolate Raspberry Cookie Recipe
The white chocolate raspberry cookie recipe combines the magical duo of white chocolate and raspberries. Truly out of this world! A great one for that special Valentine!
Ingredients

4 ounces white baking bars or white chocolate baking squares, chopped.
4 ounces white baking bars or white chocolate baking squares, melted
1/2 cup butter, softened
1 cup granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
2 3/4 cups all-purpose flour
Topping:
1/2 cup seedless raspberry jam
3 ounces white baking bars or white chocolate baking squares
1/2 teaspoon shortening
Hardware
Large bowl
2 x 1-quart saucepan
Cookie sheets
Mixer
Step 1: Preheat oven to 375 degrees F.
Step 2: Lightly grease a large cookie sheet.
Step 3: Coarsely chop 4 ounces of white baking bars; set aside.
Step 4: In a 1-quart saucepan, melt 4 ounces of white baking chocolate over low heat, stirring constantly; set aside to cool.
Step 5: In a large bowl, beat butter with an electric mixer set on medium-high speed for 30 seconds.
Step 6: Add sugar, baking soda, and salt. Beat until combined.
Step 7: Beat in eggs and melted baking bars until combined.
Step 8: Beat in as much flour as you can with mixer. Stir in remaining flour with spoon.
Step 9: Stir in chopped white chocolate baking bars.
Step 10: Drop dough by rounded teaspoons 2 inches apart onto prepared cookie sheets.
Step 11: Bake 7-9 minutes or until edges are lightly browned. Let cookie set for 1 minute before transferring to a cooling surface.
Topping:
Step 1 Just before serving, in a 1-quart saucepan melt jam over low heat. Spoon about 1/2 teaspoon of jam over each cookie.
Step 2: In another 1-quart saucepan, melt 3 ounces white baking chocolate squares and 1/2 teaspoon of shortening over low heat until smooth and creamy.
Step 3: Using the tines of a fork, drizzle white chocolate over cookies. Let stand until set.
Makes 48 cookies.

Spumoni - Part 3 - A Delicious Easy Recipe
Well, I'm sure by now you've decided that, while spumoni might well be a delicious Italian Dessert, it's WAY too much work. I wanted to provide a reasonably authentic recipe for this delicious dessert for those who wanted to hone their cooking skills. However, the tedious and time-consuming recipe listed in the previous post is not one that everyone will care to try.
With this in mind, I sought out an easier, more user-friendly recipe that would enable more people to try spumoni without the huge investment of time, energy and skill. The recipe I'm bringing to you today will be easier and faster to prepare and offers the opportunity to be selective in the ingredients for those who are fat, calorie and carb conscious.
Delicious Cookie
Easy Spumoni
Divide one half gallon of vanilla ice cream into 2 parts, 1 quart each. Need 1 quart of chocolate ice cream 1 bottle of Maraschino cherries Rum flavoring 1 pkg Instant Pistachio pudding Almond flavoring sliced almondsFor the first layer:
Slice the maraschino cherries thin and line the bottom of a square pan with them. Add the rum flavoring to your personal taste to one portion of the softened vanilla ice cream. Spread this mixture over the thinly sliced cherries in the square pan. Freeze this mixture.For the second layer:
After the first layer has frozen for several hours, take the remaining portion of the vanilla ice cream and allow it to soften. Mix 1/2 of the package of Pistachio pudding into the softened ice cream. Spread this mixture on top of the cherry-vanilla mixture and allow to freeze several hours.For the third layer:
Add almond flavoring to taste to the softened chocolate ice cream. Spread this chocolate mixture over the two vanilla mixtures. Place the sliced almonds on top of the chocolate ice cream. Allow the whole mixture to freeze for several hours. Serve as you would for regular ice cream.Enjoy this easier recipe for this delicious Italian Dessert. Feel free to substitute reduced fat or no added sugar ice creams if desired to meet the dietary needs of your friends and family....or if you feel brave....if you feel REALLY brave....try the REAL recipe....either way, you'll marvel your guests when you serve this pretty and tasty Italian Dessert. Have some real fun with this recipe and create your own variations and add your own touch to it. The fun of cooking lies largely in your ability to use your imagination to make it "yours". I've found that once you start "improvising", you'll get hooked for life!
One note-Spumoni usually has claret sauce drizzled on top. I found the following recipe:
Boil 1 c sugar and 1/4 c water 8 minutes; cool slightly, and add 1/3 c claret or light red wine.

Cream Cheese Cups Recipe
The cream cheese cups recipe is perfect for parties or when friends drop by. They are easy to make although they look like a professional baker made them. When it comes to taste, these are unbelievably delicious!
Ingredients
Delicious Cookie
Cookie dough:
2 sticks (1 cup) salted butter, softened
2 packages (3-ounces each) cream cheese, softened
2 cups all-purpose flour
Filling:
3 eggs
1 cup granulated sugar
1 package (8-ounces) almond paste, softened and cut into cubes
Sliced almonds
Hardware
Large bowl
Medium bowl
Miniature muffin tins
Mixer
Step 1: In a large bowl, with an electric mixer cream together the butter and cream cheese.
Step 2: Gradually add flour. Mix until just combined.
Step 3: Cover and refrigerate dough for 1 hour.
Step 4: After removing dough from refrigerator, preheat oven to 325 degrees F.
Step 5: Roll dough into 1-inch size balls. Press dough onto the bottom and up the sides of ungreased miniature muffin tins; set aside.
Step 6: For filling, beat eggs in a medium bowl until light and fluffy.
Step 7: Add granulated sugar; mix well.
Step 8: Beat in almond paste.
Step 9: Spoon a rounded teaspoonful into each cup.
Step 10: Top each cookies with three almond slices.
Step 11: Bake for 25-30 minutes or until lightly browned and filling is set. Cool for 10 minutes before removing to cups and transferring them to a cooling surface.
Makes about 3 dozen cups.

Halloween Cookie Recipe and Other Treats
BLACK CAT COOKIES
1 c. crunchy peanut butter
Delicious Cookie
1/3 c. water
2 eggs
1 pkg. chocolate cake mix
Plain M & M's
Red hots
Beat together peanut butter, eggs, and water. Gradually add cake mix and mix well. Form dough into 1-inch balls. Place on ungreased cookie sheet. Flatten balls with bottom of glass dipped in sugar. Pinch out 2 ears at top of cookie. Add M & M's (eyes) and red hots (nose). Press fork into dough to form whiskers. Bake at 375 degrees for 8-10 minutes. Yields 4 1/2 dozen.

PUMPKIN COOKIES
1 stick butter
1/2 c. sugar
1 egg
1/2 c. cooked pumpkin or pie filling
1/2 tsp. vanilla
1 c. all-purpose flour
1/2 tsp. baking soda

1/2 tsp. cinnamon
Preheat oven to 375 degrees. Cream the butter and sugar together in bowl. Add egg, pumpkin and vanilla. Sift dry ingredients together and add to bowl. Mix. Drop by tablespoons onto greased cookie sheet. Bake for about 15 minutes or until lightly browned.

PERFECTLY PLUMP PUMPKIN MUFFINS
1/2 cup sugar
2 tblsps. salad oil
1 egg
1/2 cup milk
2 cups flour
2 tsps. baking powder
1 tsp. salt
1 cup pureed pumpkin
Cream sugar and oil. Add egg and milk. Add dry ingredients, sifted. Add pumpkin and mix all together. Bake 20 minutes at 375 degrees and frost with white frosting. Yields 12 medium-sized muffins.

CLASSIC CARAMEL APPLES
1 lb. caramels
3 tbsp. milk
6 med. apples
6 wooden skewers
Chopped walnuts or other toppings, if desired
Wash and dry apples, insert stick. Unwrap caramels and place in double boiler or microwave safe dish. Add milk and melt, stirring until smooth. Dip apples into melted caramel, coating evenly, and roll in nuts if desired. Place on greased waxed paper to cool, then store in refrigerator. Yields 6.
Other toppings to try: Chopped walnuts, peanuts, shredded coconut, granola, sunflower seeds.

Snickerdoodle Cookie Recipe - How to Make Snickerdoodles Without Cream of Tartar
Cream of tartar is an age old ingredient, found in just about any Snickerdoodle recipe. The common household baker rarely knows what cream of tartar is, let alone has this acidic based salt in their spice cupboard. Suffice it to say you can still enjoy delicious Snickerdoodles even though you may not have any on hand. You may even find you like the end results better with a simple common substitution.
Cream of tartar is commonly used in conjunction with baking soda when making Snickerdoodle cookies. Baking soda is the leavening agent while cream of tartar has no leavening qualities at all. It is the acidic counterpart that allows the baking soda to react and not leave a bitter taste in the cookie after it is baked. Baking soda must always be used with an acid based food such as buttermilk, yogurt, fruits, and cream of tartar. A Snickerdoodle recipe usually calls for two parts cream of tartar to one part baking soda. However, in the absence of cream of tartar you can replace this two to one formula with baking powder.
