In this article we're going to briefly review the history of one of the largest manufacturers of chocolate in the world, Nestlé.

It was in the 1860s that Henri Nestlé, a pharmacist, developed a food specifically for babies who could not breast feed. He first used this successfully on a premature infant who couldn't tolerate his mother's breast milk. This product saved the child's life and people soon began to see the value of it. Soon, Farine Lactée Henri Nestlé was being sold all over Europe.

In 1905 Nestlé merged with a condensed milk company. By the early 1900s they had factories in the United States, Britain, Germany and Spain. With the outbreak of World War I, there was a great demand for these products. By the end of the war Nestlé's production more than doubled.

Unfortunately, after the war, contracts dried up and the buying public went back to getting fresh milk. In response to this, Nestlé streamlined their operation and reduced their debt. By the 1920s the company had expanded its operation with chocolate being its number two selling product.

Then World War II broke out and Nestlé immediately felt the effects. Their profits dropped from million a year before 1938 to under million a year by 1939. In spite of this, Nestlé began setting up factories in developing countries expecting a turn around by the war's end. Ironically, the war was responsible for Nestlé introducing one of its most popular products, Nescafé instant coffee, which was the number one drink of the United States military.

The end of World War II, just as Nestlé predicted, was the beginning of a great phase of growth for the company. Nestlé acquired many other companies during this time. In 1947 they merged with Maggi, Crosse & Blackwell in 1960, Libbys in 1971 and Stouffers in 1973.

By the mid 1970s, Nestlé's growth in the developing world offset their slowdown in the more developed countries like the United States. By the mid 1980s they had acquired several additional companies, the biggest of which was the American company, Carnation.

After the mid 1990s, because of the breakdown of trade barriers, Nestlé enjoyed what was probably their biggest growth in history. Their acquisitions included the giant company Ralston Purina, which mainly sells pet food.

In spite of Nestlé's diversification, they are and will always be mostly known for their ever popular chocolate bars and drinks such as Nestlé's Crunch Bar, which is now also made into an ice cream bar, Nestlé's Quick, which is a chocolate flavored powder to put in milk, Nestlé's Carnation, another popular chocolate drink, the Kit Kat Bar, Smarties, Nestlé's Maxibon, Nestlé's Extreme and a host of other products, a list that would take days to go through.

In closing, it should be pointed out that a lot of Nestlé's success was a stroke of good luck. It seems that a man named Daniel Peter figured out exactly how to combine milk and cocoa powder. The result was milk chocolate. Well, Peter just happened to be a good friend of Henri Nestlé. Peter started the company, but ultimately Nestlé took it over as was destined to happen.

This is a great tasting homemade chocolate pudding that is also low in fat. You can adjust this recipe to suit your own taste.

3/4 cup sugar

1/3 cup baking cocoa

1/4 cup cornstarch

1/8 teaspoon salt

3 cups fat free milk

1 (5 oz.) can evaporated milk

1 oz. German sweet chocolate, grated

1 teaspoon vanilla extract

1/4 cup whipped topping

Directions

In a large, heavy saucepan, combine the sugar, cocoa, cornstarch and salt. Gradually stir in the fat free milk and evaporated milk. Bring to a boil over medium heat. Cook and stir for 2 minutes or until pudding is thickened.

Remove from heat. Stir in the grated chocolate and vanilla. Spoon pudding into dessert dishes. Serve warm or cold with a dollop of whipped topping.

Here are a couple of recipes for diabetics to enjoy banana cakes. Choose from Chocolate Banana Cake and/or Yummy Banana Cake. Note: The first recipe does contain a small amount of sugar. Keep this in mind when incorporating this cake into your diet. This should be a good cake recipe for most diabetics. As always, eat sweets after a meal that has contained protein. And eat only a small piece. Over indulging will almost always cause a spike in blood sugar!

CHOCOLATE BANANA CAKE

1 cup all-purpose flour
1 tsp baking powder
1/4 tsp ground cinnamon
2 tbsp butter
1 egg beaten or 1/4 cup egg substitute
1/2 cup brown sugar
1/2 cup Equal-Sugar Lite
1/2 tsp salt
1/4 cup & 3/4 cup unsweetened cocoa powder
1/2 cup mashed banana
1 tsp vanilla extract
1/4 cup water
1 1/4 cup boiling water

Preheat oven to 350 degrees. In a large mixing bowl combine flour, Equal, baking powder, salt, cinnamon and the 3/4 cup cocoa powder.

In a 1-quart saucepan melt butter over medium heat. Remove from heat and stir in banana, egg, vanilla, and 1/4 cup water, stirring until blended. Stir in flour mixture just until blended. This mixture will be thick. Spoon into an ungreased glass 8" x 8" baking pan, spreading evenly.

In same bowl, with a wire whisk, beat brown sugar, 1/4 cup cocoa and boiling water until blended. Pour over chocolate batter. DO NOT STIR!

Bake 35 minutes; should have some fudgy sauce on the top. Serve warm.

Makes 8 servings.

YUMMY BANANA CAKE

2 1/2 cups cake flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup butter
1 1/2 cups Equal Sugar-Lite
2 eggs
1/4 cup buttermilk
1 1/4 cups finely mashed ripe bananas
1 tsp vanilla extract

Preheat oven to 375 degrees. In a large mixing bowl, stir baking soda and baking powder into flour. Set aside. Cream butter and Equal together until smooth. Add to the flour mixture. Mix in eggs, buttermilk, bananas and vanilla. Mix together until well blended. Pour into a 9x13-inch baking pan that has been sprayed with a non-stick vegetable oil spray. Bake 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Topping: Place 2 tablespoons of cornstarch and 3/4 cup Splenda Granular in blender. Blend until a very fine powder. Using like you would powdered sugar, sprinkle over top of cake Store any leftover in an airtight jar.

There's truly nothing more tempting and so heavenly than being able to enjoy a rich and luscious serving of chocolate cake. When it comes to cake decorations, chocolate is king. There is great value in learning how to properly master the art of using chocolate for cake decorations and it will certainly go a very long way in terms of presentation. But before you start delving into the various methods and recipes available let's start with the basics first. It would be a great injustice to take chocolate very lightly.

First, you need to learn how to melt chocolate. The problem that most beginners have is that they tend to melt the chocolate a bit too quickly. In order to melt it properly, the chocolate must first be broken down methodically. Whether the piece or chunk is sliced or shaved, the heat must be made to work on the entire surface area of the chocolate being melted in order for it to be of uniform smoothness. The best way of doing so is to place the pieces into a small container and putting it inside a pot of warm or hot water. Note that boiling water is not advised at all. The chocolate will begin to melt evenly but do not forget to stir. Keep at it until the chocolate becomes completely melted and without any lumps or chunks. Once the chocolate has been properly melted, you can now begin the process of shaping and forming the chocolate into any desired shape or purpose.

Making curls and cutouts from the chocolate is made possible once the chocolate has reached a certain velvety smoothness. In order to do so, the chocolate should be spread evenly onto a flat surface like a metal baking pan or cookie sheet. It should be left to cool by itself at room temperature.

Chocolate curls are made by scraping the chocolate with a metal spatula. If done properly, the chocolate will start forming curls as it is being scraped. Place the scraped chocolate onto some parchment in order to allow it to cool and harden further.

Chocolate cutouts, on the other hand, are just as easy to make as the chocolate curls. All it takes is to simply use a sharp knife or other tool available to make the desired shape or design. Depending on the situation, even a cookie cutter will work just as well for the job.

Besides melting the chocolate, there's also another important method of using chocolate for making simple yet very stunning effects on any cake. This is with the use of sifted cocoa powder. The process involves topping the cake with a stenciled paper design and slowly sprinkling the cocoa powder onto the cake. Once the design is removed, what results is a very nice design with a powdered accent.

Now that the basics have been covered, more advanced steps or techniques can now be started. Feel free to get the basics right first and then build on that foundation. Everyone loves a delicious chocolate cake so taking the time to properly prepare one will certainly reap a lot of satisfaction in the long run.

Hot summer days remind me of my mother's chocolate whipped cream layer cake. My mother, an excellent baker, was famous for her orange sponge cake. She didn't bake sponge cake in the summer, however, because she didn't want to heat up the kitchen. Instead, Mom bought a sponge loaf from the store. She cut the cake into layers and frosted the layers and sides with chocolate whipped cream.

Cream cakes, or ice box cakes as they used to be called, have been around for years. Fannie Farmer's "Boston Cooking School Cook Book," first published in 1898, contains a recipe for French Cream Filling. The filling is made with heavy cream, powdered sugar, a stiffly-beaten egg white, and vanilla.

The wartime edition of "The Victory Cook Book" has a recipe that is almost identical to Fannie Farmer's recipe. Gelatin powder is added to the whipping cream to keep it stiff. The original "Joy of Cooking" by Irma S. Rombauer and Marion rombauer Becker, also has a recipe for whipped cream frosting, only they call it Sweetened Whipped Cream and Creme Chantilly Frosting. Their recipe has many variations: almond cream (toasted slivered almonds or almond paste), toasted coconut, orange marmalade or other jam, and fresh berries, to list a few.

In her two-volume book, the "Modern Encylopedia of Cooking," Meta Given devotes an entire section to refrigerated cakes and ice box cakes. "Refrigerated Cakes are ideal party cakes because they are usually made the day before they are served," she writes. Certainly, I felt like I was at a party every time I ate Mom's Chocolate Whipped Cream Layer Cake. You will turn an ordinary meal into a party when you serve this creamy, chocolaty, and decadent dessert.

Ingredients

1 10.75-ounce frozen pound cake

1 1/2 cups heavy cream

1/2 cup powdered sugar

1 tablespoon unflavored gelatin powder

2 tablespoons water

2 tablespoons chocolate syrup (Mom used Hershey's.)

1 dark chocolate candy bar

Method

Cut defrosted pound cake into three layers. Dissolve gelatin in water and set aside for five minutes. Combine powdered sugar and heavy cream in a small mixer bowl. Beat cream until it starts to thicken. Gradually add the chocolate syrup and dissolved gelatin. Continue beating until the cream makes soft mounds, but is not stiff.

Frost the layers with the whipped cream mixture. Stack the layers and frost the outside of the cake. Garnish the top with shaved dark chocolate. Stick two toothpicks in the top of the cake (to protect the frosting) and cover with release foil. Referigerate the cake for at least four hours. For Coffee Whipped Cream Layer Cake substitute two tablespoons of cold, extra-strong coffee for the chocolate syrup. Makes 6-8 servings.

Why Chocolate for Valentine's Day?

Valentine's Day is many things to different people- a chance to start new relationships, rekindle old ones, or remind that special someone how wonderful they really are. Others feel it is just another "Hallmark" holiday where they are expected to do something for unknown reasons. Regardless of your hopes, expectations, or reservations about Valentine's Day, chocolate has long been a favorite gift for lovers.

Since the days of the Aztecs chocolate has been used as a gift. Today a box of luxurious quality chocolate says a thousand "thank you's", "good luck", or "I love you". Chocolate can be given as a way of saying "congratulations", "I am sorry" or "get well soon". On Valentine's Day chocolate clearly says "I LOVE YOU!" Chocolate is more than food, it not only fills your belly but also makes you feel soooo good. Elaine Sherman wrote "Chocolate is heavenly, mellow, sensual, deep, dark, sumptuous, gratifying, potent, dense, creamy, seductive, suggestive, rich, excessive, silky, smooth, luxurious, celestial. Even the scientific name for the tree from which chocolate is derived, Theobroma cacao, translated from Greek, means "food of the gods".

Why does chocolate evoke so many feelings and emotions for us? Chocolate has long been associated with passion, romance and love. This association may go all the way back to the Aztecs. They believed chocolate was a source of spiritual wisdom, incredible energy and elevated sexual power. Chocolate was widely used as a nuptial aid and was widely served at wedding ceremonies. The Aztecs did not know chocolate as we do today; they consumed the cocoa as a drink. Reports indicate that the Emperor Montezuma consumed large quantities of the drink every day and always fortified himself with a cup before entertaining his harem. The explorer Cortes reported to Carlos I of Spain that chocolate is "... the divine drink which builds up resistance and fights fatigue. A cup of this precious drink enables a man to walk for a whole day without food." From the earliest times, chocolate was considered a substance of power and a source of vitality.

Chocolate has been a subject of study since the first shipment from Veracruz arrived in Spain in 1585. But modern science has made some interesting findings that may help explain our lust for quality chocolate. Chocolate contains organic substances known as alkaloids. The most important of these substances is theobromine, which works as a stimulant to the kidneys. Stimulants in chocolate also affect the central nervous system, with effects similar to caffeine, which is also present in chocolate. A chocolate bar may contain as much as 200 mg of theobromine but only about 25 mg of caffeine. Another important substance found in chocolate is phenylethylamine, which is part of a group of chemicals known as endorphins. Endorphins have an effect similar to amphetamine and are found naturally in the human body. When endorphins are released into the bloodstream, the mood is lifted and feelings of positive energy are reached. The sensation known as "runners high" is caused by endorphins released during exercise. Phenylethylamine levels in the brain have also been linked to "falling in love". One more chemical found in chocolate is seratonin. Seratonin is known for its calming properties. The presence of these chemicals may explain the multitude of feelings chocolate evokes.

Debra Waterhouse, author of Why Women Need Chocolate, conducted a survey and found: 97% of women reported cravings, 68% of which are for chocolate, 50% would choose chocolate over sex, and 22% were more likely than men to choose chocolate as a mood elevator. These findings could easily be interpreted as a result of how chocolate makes us feel. I don't know why more women choose chocolate than men, for I am a man and I love chocolate.

Critics would say that the benefits of eating chocolate are small when compared to the sugar and fat contained in a chocolate bar. The best chocolate, dark chocolate with high cacao butter content has no added fat, as well as a high percentage of cacao solids and correspondingly less sugar. Although chocolate will never be considered a health food based on its nutritional value, it is still good for you! Good for your heart and soul-anything that helps relieve stress and makes you feel so good must be.

Receiving a nicely wrapped box of chocolates causes a sense of anticipation. The pleasure of unwrapping the box, the sensual smell, lifting the soft seductive papers, the look of the smooth dark chocolates. When it finally passes your lips and starts to instantly melt filling your mouth with exquisite pleasure. The taste and smell flood your senses with overwhelming ecstasy. The Dangers In Chocolate

Let's face it, many of us are chocoholics. If we weren't, we wouldn't be constantly bombarded with ads for Ring Dings, Devil Dogs and what have you. If you counted the number of ads in newspapers, magazines and on TV for some kind of chocolate product and tied them end to end, you could probably go to the moon and back a hundred times. Well, as good as chocolate might taste, especially that absolutely incredible German chocolate, it is probably one of the worst things you can put in your body. In this article, we'll cover just a few of the dangers of chocolate and chocolate based products. You may not ever eat another Ring Ding for the rest of your life.

The cocoa bean, of which chocolate is partially made, is loaded with caffeine. This is a good part of the reason why kids who eat a lot of chocolate are so hyper. The caffeine in some chocolate products is actually greater than the caffeine in a cup of coffee or even a can of cola. Chocolate in children is like putting them on speed. One of the biggest causes of ADHD in children is because of chocolate and chocolate based products.

But caffeine is only part of the problem and really just the tip of the iceberg. If you ever tasted chocolate in its pure form, you probably noticed that it was actually a little on the bitter side. It certainly isn't sweet like the chocolate products that you are used to eating. The reason these products are so sweet is because they are loaded with sugar. It is almost impossible to find a chocolate based product that isn't loaded with sugar, outside of dietetic products, simply because they quite honestly don't taste very good and there wouldn't be as big a market. As a result, the sugar contained in these chocolate products causes a number of problems including diabetes, high blood pressure, hardening of the arteries, and way too many illnesses to list here. As a matter of fact, sugar is one of the leading caused of health problems in the United States.

To further add insult to injury, most commercially available chocolate products are loaded with chemicals to keep them fresh. Did you ever look at the expiration date on a package of Ring Dings? Nothing should last that long and still be edible.

straightforward No Bake Chocolate Macaroon formula

This formula was a favorite of my sister and I. We loved it when my mom would make these. When we were old enough to cook, the house always smelled like chocolate macaroons. I think we made this formula about a combine of times a week. They are very easy to make and super yummy to eat! another thing I like about this formula is that you don't use a lot of dishes, so clean-up is a breeze as well. These cookies are great if you are in a pinch and need to make something tasty in a hurry. another great thing is the ingredient list is very short and most things I'm sure you will be able to find in your very own kitchen.

I hope you enjoy making these macaroons as much as I know you will enjoy eating them.

Cookie Recipes

What you need to make the macaroons:

2 cups granulated sugar

1/2 cup butter

1/2 cup milk

6 tbsp cocoa

1/2 cup fine shredded coconut

3 cups oatmeal

1-2 cookie sheets waxed paper

1. combine the first four ingredients together in a large pot and bring to a boil for about 2-3 minutes, stirring constantly.

2. Take pot off of stove and add the coconut and oatmeal. Mix until all things is coated.

3. Place on a wax paper lined cookie sheet by heaping tablespoon-fulls. To have these cookies ready quickly, cool in refrigerator, or leave and let cool to room temp.

I love cookies. I love everything about cookies. I love the shape and the smell and the taste of cookies. I've eaten all kinds of cookies - store bought cookies, Christmas cookies, categorically Big cookies, and cookies I baked myself. None, however, can collate to my miniature Gram's Chocolate Chip Cookies - the many of all cookies.

These cookies are made with chocolate chips, crushed peanuts, brown sugar, shortening, flour, baking soda, and four eggs. All these ingredients are mixed together, molded into about 60 raw cookies, and baked at 400 degrees for thirteen minutes. Believe it or not, this simple method makes the perfect chocolate chip cookie. They're almost a food group.

To properly eat this circular blob of perfection, I perform the "Ritual of the perfect Cookie." First, I get a large glass of milk. Then, I take the red, slightly dented cookie-filled tin and gently remove the lid. Inside lay the high-priced delights. I look for the best one to eat first; its about an inch in diameter and speckled with chocolate chips and peanut chunks. Smiling, I baptize it in the milk and swallow it whole. I ultimately consume as many as my mortal body can hold. This is my ritual for eating my miniature Gram's Chocolate Chip Cookies.

When I am eating her cookies I taste sensations that I never dreamed possible. Waves of deliciousness orally enter me, spreading rapidly through my body, and I taste a burst of vigor unknown to most humans. I feel as if I have a perfect body, perfect vision, and even perfect spelling. I am mentally and physically a good person, at one with the world. And that is after only one cookie!

It sounds as if I am exaggerating, and maybe I am...just a little, but my miniature Gram's are the best darn cookie I've ever eaten. One ingredient of the cookie I failed to mention is also the most important: love. My great grandma's love gives the cookies shape, taste, character, and that's why miniature Gram's Chocolate Chip Cookies - are the many of all cookies.

Little Gram's Chocolate Chip Cookies
4 eggs
1 lb of flour
1/2 lb of brown sugar
1 cup of chopped peanuts
6 oz. Of chocolate chips
1/2 of shortening
1/4 tsp of baking soda
1/4 tsp of baking powder

Beat shortening then add sugar. When light and fluffy, add eggs. When fluffy add flour and beat. When it gets too heavy for beater add flour by hand. Add nuts and chips. Bake at 14 minutes at 375 or 13 minutes at 400 according to which is best for your stove. Makes approx 60 cookies.

Chocolate Mint Sandwich Cookies Recipe

1 1/2 cups packed brown sugar

White Chocolate Raspberry Cookie Recipe

1/2 cup seedless raspberry jam

Hardware

Large bowl

2 x 1-quart saucepan

Cookie sheets

Mixer

Step 1: Preheat oven to 375 degrees F.

Step 2: Lightly grease a large cookie sheet.

Step 3: Coarsely chop 4 ounces of white baking bars; set aside.

Step 4: In a 1-quart saucepan, melt 4 ounces of white baking chocolate over low heat, stirring constantly; set aside to cool.

Step 5: In a large bowl, beat butter with an electric mixer set on medium-high speed for 30 seconds.

Step 6: Add sugar, baking soda, and salt. Beat until combined.

Step 1 Just before serving, in a 1-quart saucepan melt jam over low heat. Spoon about 1/2 teaspoon of jam over each cookie.

Step 2: In another 1-quart saucepan, melt 3 ounces white baking chocolate squares and 1/2 teaspoon of shortening over low heat until smooth and creamy.

Step 3: Using the tines of a fork, drizzle white chocolate over cookies. Let stand until set.

Delicious Shapes - Chocolate Molds

A chocolate mold is a cavity, usually made of plastic, used for forming chocolates in desired shapes. A chocolate mold can usually withstand up to 160 degrees F of heat so should be used with low-heat melting chocolate. Some molds are made from rubber or silicone, while other chocolate molds are made from metal.

Most chocolate molds produce one sided chocolates which are flat on one side and formed on the other. Some manufacturers provide three dimensional molds that create a fully shaped chocolate. This is usually achieved when two molds are used then joined together in a semi-hardened state. A newer solution to achieving round shaped chocolates is to use a magnetic chocolate mold. This allows the melted chocolate to be placed inside the sphere with the magnets holding the mold together until it hardens in the desired shape.
